The Royal Borough of Kingston clarified that kimchi made by pickling and fermenting vegetables is the national dish of Korea.

It stressed that the process of making kimchi, called “kimjang,” was designated a UNESCO Intangible Cultural Heritage of Humanity.

The primary reason why the Royal Borough of Kingston designated November 22 as Kimchi Day was that kimjang is usually undertaken in November ahead of the winter months, and kimchi has 22 different health benefits.
